Zucchini with Basil Soup


Serves: 2


  • 2 zucchinis cut
  • Handful of Fresh Basil Leaves about 1/3-1/2 cup
  • 3 cups Veggie Broth
  • 3 Garlic Cloves minced
  • 1 Yellow Onion chopped
  • 1 tsp Oregano 
  • 1/2 tsp Garlic Powder 
  • 1 tbsp Nutritional Yeast 
  • 1/2 Avocado
  • Salt and Pepper to taste



  1. Sauté Onion and Garlic for 5-7 min with splashes of water to keep from sticking
  2. Add Zucchini and sauté for another 3 min
  3. Then add Veggie Broth, Garlic Powder, Oregano and Nutritional Yeast
  4. Bring to a boil. Then simmer for 20 min
  5. Stir in the basil leaves and let cool for a few minutes
  6. Add everything to blender plus the Avocado and blend until smooth and creamy
  7. Return to pot, reheat if needed and serve
