Bell Pepper and Cheese Skewers

Ingredients:

For skewers:

  • 5 garlic cloves
  • 1/2 tsp cumin
  • Pepper corns
  • 250 gms paneer (Ricota Cheese Cubes)
  • Skewers sticks
  • 1 lemon squeezed
  • 10 green olives
  • 1/2 tsp chilli flakes
  • 1/2 tsp black pepper
  • Handful of basil leaves
  • 1 red bell pepper
  • 3 Tbsp extra virgin olive oil

For hung curd dipping:

  • 600 ml of hung curd
  • 2 Tbsp extra virgin olive oil
  • 1 tsp chilli powder
  • 1/2 tsp black pepper
  • 1 lemon squeezed
  • Salt to flavor
  • Handful of dill leaves chopped
  • Handful of coriander leaves, finely chopped
  • 1 Tbsp honey

 

Preparation:

How to make bell pepper and cheese skewers:

  1. Prepare the marinate.
  2. In the grinder add garlic, green olives, chilli flakes, cumin, black pepper, few sprigs of basil leaves and salt. Grind it all together.
  3. Add olive oil and lemon juice, then mix it with the paste.
  4. Thread paneer, red bell pepper on the skewers sticks.
  5. Massage marinate into the skewers.
  6. Pre heat the grill pan and drizzle it with olive oil.
  7. Gently lower the skewers into the pan and grill it.

For hung curd dip:

  1. In a bowl, add hung curd, olive oil, chilli powder, black pepper, lemon juice, salt, dill leaves, coriander leaves, honey.
  2. Mix it well and serve it with the skewers.
