Blueberry Vegan Smoothie

  • 2 cans coconut milk refrigerated overnight
  • 1 cup blueberries frozen are fine, but I prefer fresh
  • 1 tspn honey
  • ⅓ tspn nutritional yeast optional
  • 1/2 cup coconut milk like what you would use in cereal
  • Pinch salt
  • Pinch cinnamon
  • Sprig of mint for garnish, optional



    1. Open the coconut milk cans from the bottom, drain the water off and scoop the thick cream out into your blender or food processor.
    2. Add your blueberries, honey, cinnamon, coconut milk and salt.
    3. Blend until smooth.
    4. Add nutritional yeast, if desired.
    5. Place your sprig of mint on top.
    6. Drop a few blueberries on top for garnish.
