Basil Sandwich

Serves: 1 Sandwich

Ingredients:

  • 3 cups packed fresh basil
  • 2/3 cup extra virgin olive oil
  • 1/2 cup pine nuts, toasted until golden and cooled
  • 2/3 cup grated parmesan cheese
  • Salt and pepper to taste
  • 2 slices whole wheat bread
  • 1-2 tsp Vegannaise
  • 1/2 tsp balsamic vinegar (optional) 

 

Preparation:

  1. In a food processor or blender, combine basil and about 2 tablespoons of the extra virgin olive oil, blend into a paste.
  2. Add pine nuts, parmesan cheese and remaining oil and pulse until smooth.
  3. Spread the Vegannaise on one slice of the bread. Spread the basil paste evenly across the slice.
  4. Drizzle with balsamic, if using, and sprinkle salt and pepper on top.
