Zucchini with Basil Soup
Cuisine: Mediterranean
Serves: 2
Ingredients:
- 2 zucchinis cut
- Handful of Fresh Basil Leaves about 1/3-1/2 cup
- 3 cups Veggie Broth
- 3 Garlic Cloves minced
- 1 Yellow Onion chopped
- 1 tsp Oregano
- 1/2 Avocado
- Salt and Pepper to taste
Preparation:
- Sauté Onion and Garlic for 5-7 min with splashes of water to keep from sticking.
- Add Zucchini and sauté for another 3 min.
- Then add Veggie Broth, and Oregano.
- Bring to a boil. Then simmer for 20 min.
- Stir in the basil leaves and let cool for a few minutes.
- Add everything to blender plus the Avocado and blend until smooth and creamy
- Return to pot, reheat if needed and serve.
Serving Suggestions: Serve hot with nice and warm French Toast.
