Cinco De Mayo Salsa

Ingredients:
- 3 Large Tomatoes Diced
- 1 small can of pickled Jalapeno or Serrano peppers
- 1 can (16 oz each) Rosarita® Traditional Refried Beans
- 2 cups guacamole
- 1 cup shredded Cheddar cheese (1 cup = 4 oz)
- 1/4 cup sliced green onions
- 1/2 cup sour cream
- 1/4 cup sliced ripe olives
- Tortilla chips, optional
Preparation:
- Reserve 1/2 cup of the drained tomatoes; set aside. Combine the remaining tomatoes, peppers, and beans in medium bowl; mix well. Spoon bean mixture evenly into eight (4-ounce) martini glasses.
- Divide the guacamole, cheese, reserved tomatoes, onions, sour cream and olives equally in layers over the beans between glasses.
- Insert 1 tortilla chip in dip of each glass for garnish. Serve with additional tortilla chips, if desired.
