Thanksgiving - Pumpkin Pie
Thanksgiving is an American favorite holiday time to sit back, relax, and enjoy with the family. Whether you are having a family get together or enjoying by yourself, one thing this holiday inspires to do is to cook and eat with gratitude and appreciation.

Ingredients for Pie Mix
  • 1 (15 oz.) can pumpkin
  •  1 cup coconut milk
  •  1/3 cup maple syrup
  •  2 tablespoons brown sugar
  •  1 tablespoon pumpkin pie spice
  •  Pinch of Cardamom Powder
  •  Pinch of Cinnamon Powder
  •  3 tablespoons organic corn starch
  •  1/2 teaspoon sea salt
  •  1 teaspoon pure vanilla extract
    Ingredients for Pie Crust and Garnish:
    • 1.5 cups of Graham crackers finely mixed
    • 1 stick of butter
    •  Dairy free whipped cream, for serving
    • 1/2 cup Pecans crushed coarsely

    Preparation:

    • Preheat the oven to 350 degrees F.
    • Mix Graham crackers in a bowl and mix it with butter. Form a thin dough and press it against the pie plate. Use fork or your finger to make design at the edges. Bake the pie crust for 15-20mins. You can purchase a store bought crust if you like. 
    • In a medium sized mixing bowl, combine all the ingredients together and whisk until they are all mixed well. You can also combine in a blender. Pour into the par-baked pie crust and carefully transfer to the oven. Bake for 45 minutes. Be sure to cover the crust edges with foil or a crust shield if they are getting dark.
    • Remove from the oven and let the pie cool completely. Transfer to the refrigerator to set up over night.
    • Serve chilled with dairy free whipped cream and sprinkle Pecans on the top. Serve with ice cream if you are in a mood for it.
