They are purple-skinned, with greenish purple color inside. The Purple Bell Pepper has a sweet flavor that is slightly more bitter than red, orange or yellow bell peppers. When cooked the Purple color turns into Green. It is rich with anti-oxidants. They can be used for roasting, stuffing, and for salads. Scoville Scale: On the Scoville scale, a sweet bell pepper scores 0, while a Jalapeno Pepper around 2,500-4,000, and a Mexican habanero- 200,000 to 500,000 units. | |
